VERDE was born from a simple belief: the best Italian food starts with the best ingredients, grown close to home. When Chef Marco Ferretti left his family's kitchen in the hills outside Siena, he carried with him not just his grandmother Lucia's recipes, but her philosophy — that cooking is an act of love, and every ingredient deserves respect.
In 2018, Marco opened VERDE in the heart of Greenwich Village with a promise: every dish would honor the seasons, every ingredient would be traceable to the hands that grew it. Today, we partner with over a dozen farms across the Hudson Valley, receiving deliveries three times a week of vegetables pulled that morning, eggs gathered at dawn, and heritage-breed meats raised on open pasture.
The result is a menu that changes with the weather, a dining room that feels like family, and food that tastes the way Italian cooking was always meant to — honest, vibrant, and deeply satisfying.
